PARKVILLE, Mo. — After days of dreary weather, the sunshine made a welcome return to Parkville, bringing with it more than just clearer skies.
It brought more foot traffic to K-tacos & More, a Mexican restaurant in the downtown district.
K Tacos & More, a Parkville favorite, has managed to stay open through much of the recent rough weather. The locally owned restaurant, which has been serving the community for about a year and a half, offers a lively mix of street-style tacos, including asada, along with margaritas that add to the festive atmosphere.

“We always turn it around and make it positive,” said Rosa Para, Owner of K-Tacos.
“I feel like a smile and being very welcoming, regardless of the other weather that makes a huge impact in people’s life. Some people don’t have food at home and they’re just like, ‘Oh my god, I forgot to buy groceries. But K-Tacos is open, so let’s go grab a bite.’”
Owner Rosa Parra says running a small business means learning to adapt, especially when the weather becomes an obstacle. Cold temperatures can make it difficult for customers to get out, but Parra says the Parkville community continues to show up.
“The locals are keeping our business afloat, especially in this time of the year. Whenever the weather conditions are not the best, they always come out and support us.” Parra said.
That sense of community is one of the reasons Parra says owning a business in Parkville is so rewarding. The downtown area thrives on local support, with residents intentionally choosing to shop and dine small, even when the forecast isn’t ideal.
Social media has also become a key tool in navigating weather-related challenges. On a social media page, the restaurant was mentioned as an open business on Sunday. Parra says platforms like Facebook and Instagram help keep customers informed on changing hours and whether the restaurant is open during tough conditions.

Just as much as the community gives K-Tacos, Parra said they are willing and always hopeful to do the same thing. In fact, that’s one of the reasons Parra opened K-Tacos.
The restaurant wasn’t the only business welcoming customers back. Several other downtown Parkville shops and restaurants like the Craic on Main and La Bottega Vintage Market reopened for the day, taking advantage of the improved weather and renewed energy in the area.
For Parra and other small business owners, the recent stretch of challenging weather served as a reminder of how closely tied business can be to the forecast, but also how powerful community support can be
“We want to make sure that everybody feels welcome,” Parra said.
“It’s a big smile and a hug that always goes a long way.”
